Oily beans play a major role in the preparation of chemicals. Soy is probably the result of the domestication of a wild plant in East Asia. Oil extracted from soybeans is one of the most important types of oils. This oil contains very high linoleic acid and therefore it cannot be used for frying oil. Soybean is poor in amino acid methionine compared to sesame, but it is high in amino acid lysine. Soy is more similar to animal protein than other grains. Soybean oil has 49% linoleic acid and 25% oleic acid. Soybean protein content is much higher than other oilseeds. The figures below show the main difference between soybean and other oilseeds in terms of oil and protein content. The amount of soy protein is 50-30%, rapeseed 18-25%, sunflower 25-15%, safflower 25-15%, sesame 25-19%, peanut 25-35%. The amount of oil in soy is 18-25%, rapeseed 40-50%, sunflower 25-50%, safflower 40-50%, sesame 25-45%, peanut 45-65%. The amount of soybean protein is twice that of other oilseeds, but its oil percentage is lower than other common oilseeds. The presence of a lot of protein has made its extracted oil meal very suitable for human nutrition.
